concrete designed restaurant Noble based on the
knowledge and cosmopolitan experiences of chef
Edwin Kats, and is located in the characteristic Chalet
Royal building in 's-Hertogenbosch.
Noble was designed as ‘home of the chef’, with an
entrance, tasting room, kitchen, private dining, dining
room and terrace. From the entrance, guests pass a
large glass wine cabinet before entering a large
central area, the tasting room, where they are
welcomed for an aperitif. On one side of the space
they see (or pass by) the open kitchen where the chef
is performing his art. On the other side is the private
dining room - designed as his library, which features
cookbooks, photos and personal memorabilia of the
chef. Each room in the house has a unique character
that is expressed in the materials, colours and
lighting. In line with the menu, the house is filled with
honest and pure materials (brass, marble and oak),
which are manifested as materials with cosmopolitan
influences such as (coloured) glass, brass mesh and
